Achaari Bhindi
Ingredients:
- 500gms Okra (Ladies Finger)
- 2tsp chopped ginger
- 1/4 cup fresh thick Yogurt
- 1/4tsp Turmeric powder
- 3/4tsp red chilli powder
- 2tsp Coriander powder
- 4tbsp olive oil
- 3/4 cup chopped tomatoes
- Salt to taste
FOR ACHARRI MASALA:
- 2tsp Fennel Seeds
- 1tsp Mustard Seeds
- 1/2tsp Onion Seeds
- 1/4tsp Fenugreek Seeds
- 1 pinch Asafoetida
Method:
- Wash, wipe dry and slit the okra into half n then cut them into 25mm ( 1") pieces.
- Heat 2tbsp of oil in a pan n sauté the okra until light golden brown n keep aside.
- Heat 2tbsp oil in another pan n add Whole Achaari Masala to it.
- When seeds crackle, add ginger n tomatoes n sauté for 5mins until the mixture leaves oil.
- Meanwhile whisk yogurt, turmeric powder n coriander powder, red chilli powder n salt.
- Now add this yogurt mixture to the pan, mix well n cook for couple of mins.
- Now add okra and Simmer for 2 mins.
- Serve hot.
