Achaari Bhindi


Ingredients:

  • 500gms Okra (Ladies Finger)
  • 2tsp chopped ginger
  • 1/4 cup fresh thick Yogurt
  • 1/4tsp Turmeric powder
  • 3/4tsp red chilli powder
  • 2tsp Coriander powder
  • 4tbsp olive oil
  • 3/4 cup chopped tomatoes
  • Salt to taste


FOR ACHARRI MASALA:

  • 2tsp Fennel Seeds
  • 1tsp Mustard Seeds
  • 1/2tsp Onion Seeds
  • 1/4tsp Fenugreek Seeds
  • 1 pinch Asafoetida 

Method:

  1. Wash, wipe dry and slit the okra into half n then cut them into 25mm ( 1") pieces.
  2. Heat 2tbsp of oil in a pan n sauté the okra until light golden brown n keep aside.
  3. Heat 2tbsp oil in another pan n add Whole Achaari Masala to it.
  4. When seeds crackle, add ginger n tomatoes n sauté for 5mins until the mixture leaves oil.
  5. Meanwhile whisk yogurt, turmeric powder n coriander powder, red chilli powder n salt.
  6. Now add this yogurt mixture to the pan, mix well n cook for couple of mins.
  7. Now add okra and Simmer for 2 mins.
  8. Serve hot.
