Ridge Gourd Bhaji

Ridge Gourd Bhaji (Herikay)


Ingredients :

  • 1.1/2 Cup Ridge Gourd peeled n chopped
  • 1 Onion Finely chopped
  • 1 Small Tomato finely chopped
  • 1tsp Mustard Seeds
  • 1tsp Cumin seeds
  • 5-6 Curry Leaves finely chopped
  • 1tsp Red Chilli Powder
  • 1tsp Coriander Powder
  • 1tsp Garam Masala Powder
  • 1tsp Jiggery
  • Salt to taste
  • 1 pinch Asafoetida
  • 1tsp Garlic Ginger Paste
  • Water if required
  • Fresh Coriander for Garnish
  • 2tsp Olive oil

Method:


  1. Heat oil in a cooker pan, when hot add Mustard seeds, cumin seeds, asafoetida, curry leaves n onions n sauté till onion gets translucent.
  2. Now add Garlic Ginger paste n sauté till raw smell goes away.
  3. Now add coriander powder n mix well, adding tomatoes.
  4. Now add red chilli powder n garam masala n mix n cook for 2mins. Now add salt and Jiggery n mix well again.
  5. Now add chopped ridge gourd, mix well. (Add water if required) and close the lid of the cooker n cook for 1 whistle.
  6. Let it rest, now mix gently n garnish with chopped Coriander n Serve hot.
