Ridge Gourd Bhaji (Herikay)
Ingredients :
- 1.1/2 Cup Ridge Gourd peeled n chopped
- 1 Onion Finely chopped
- 1 Small Tomato finely chopped
- 1tsp Mustard Seeds
- 1tsp Cumin seeds
- 5-6 Curry Leaves finely chopped
- 1tsp Red Chilli Powder
- 1tsp Coriander Powder
- 1tsp Garam Masala Powder
- 1tsp Jiggery
- Salt to taste
- 1 pinch Asafoetida
- 1tsp Garlic Ginger Paste
- Water if required
- Fresh Coriander for Garnish
- 2tsp Olive oil
Method:
- Heat oil in a cooker pan, when hot add Mustard seeds, cumin seeds, asafoetida, curry leaves n onions n sauté till onion gets translucent.
- Now add Garlic Ginger paste n sauté till raw smell goes away.
- Now add coriander powder n mix well, adding tomatoes.
- Now add red chilli powder n garam masala n mix n cook for 2mins. Now add salt and Jiggery n mix well again.
- Now add chopped ridge gourd, mix well. (Add water if required) and close the lid of the cooker n cook for 1 whistle.
- Let it rest, now mix gently n garnish with chopped Coriander n Serve hot.
