Avocado & Almond Soup
Ingredients:
- 600ml Water
- 1 Onion Finely chopped
- 1 Carrot Grated
- 4 Garlic cloves chopped
- 1Bay Leaf
- Salt to taste
- 100g Ground Almonds
- 2 Ripe Avocado
- 3-4 tbsp Lemon juice
- Extra olive oil for drizzling
- Black Pepper to taste
Method:
- Combine the water, carrot, garlic, bay leaf and salt in a pan. Bring to the boil, reduce the heat, cover and simmer for about 30mins. ( or until vegetables are tender ).
- Now strain the mixture, and remove the bay leaf. ( Do not throw the liquid or the vegetables )
- Put the vegetables into a blender, adding the almonds and small amount of the liquid and blend into smooth puree.
- Add the puree into the bowl, cover and chill in the refrigerator until cold.
- Now cut the avocados in half, discard the stones n scoop the flesh into the blender.
- To that add the cold soup base n process to a smooth puree. Now add lemon
juice and crushed black pepper.
Drizzle with olive oil. - Serve immediately.
