Avocado & Almond Soup

Avocado & Almond Soup


Ingredients:

  • 600ml Water
  • 1 Onion Finely chopped
  • 1 Carrot Grated
  • 4 Garlic cloves chopped
  • 1Bay Leaf
  • Salt to taste
  • 100g Ground Almonds
  • 2 Ripe Avocado
  • 3-4 tbsp Lemon juice
  • Extra olive oil for drizzling
  • Black Pepper to taste

Method:

  1. Combine the water, carrot, garlic, bay leaf and salt in a pan. Bring to the boil, reduce the heat, cover and simmer for about 30mins. ( or until vegetables are tender ).
  2. Now strain the mixture, and remove the bay leaf. ( Do not throw the liquid or the vegetables )
  3. Put the vegetables into a blender, adding the almonds and small amount of the liquid and blend into smooth puree.
  4. Add the puree into the bowl, cover and chill in the refrigerator until cold.
  5. Now cut the avocados in half, discard the stones n scoop the flesh into the blender.
  6. To that add the cold soup base n process to a smooth puree. Now add lemon juice and crushed black pepper.
    Drizzle with olive oil.
  7. Serve immediately.
