Coriander Upma

Ingredients:

  • 1cup Semolina (Rava)
  • 2tbsp Olive Oil
  • 1tsp Split black lentils ( urad dal)
  • 1tsp Mustard Seeds
  • 1pinch Asafoetida (hing)
  • 4-5 Curry Leaves finely chopped
  • 1/4 cup chopping Onions
  • Salt to taste
  • 1/2tsp Sugar
  • 2tbsp finely chopped coriander for garnish
  • 2.1/2 cup hot water

To be Blended into a paste (using little water):

  • 1/2 cup roughly chopped coriander
  • 3 green chilies
  • 1tsp Sugar
  • 1tsp cumin seeds
  • 1tsp Lemon juice
  • 1inch Ginger
  • Salt to taste

Method:

  1. Dry Roast the semolina in a broad pan on medium flame for 3-4mins, until light golden brown. Keep aside.
  2. Heat oil in a deep pan and add urad dal and mustard seeds.
  3. When seeds crackle add asafoetida, curry leaves and salt and saute on a medium flame for couple of minutes.
  4. Add roasted semolina and saute on medium flame for 1 min.
  5. Add the coriander paste and cook on medium flame for 1min.
  6. Add 2 1/2cups of hot water and cook for 2mins or until the water evaporates, while stirring continuously.
  7. Add sugar and chopped coriander, mix well n serve hot.
