Cumin- Spiced Carrot Soup

Cumin- Spiced Carrot Soup


Ingredients:

  • 1tbsp Olive oil
  • 1 Large Onion Finely chopped
  • 1 Clove Garlic finely chopped
  • 1tbsp Ground Cumin
  • 6 medium carrots, thinly sliced
  • 900ml Vegetable Stock
  • 1tsp ground black pepper
  • 1tsp Fresh Coriander to garnish 

Method:

  1. Heat oil in a large saucepan, add onions, garlic and fry gently for 5mins  or until softened, stirring occasionally.
  2. Now add cumin and fry, stirring for 1 to 2 mins to release flavor.
  3. Now add Carrots, stock n black pepper to the onion mixture n stir to combine.
  4. Bring to simmer, cover n stir occasionally, for 30-35 mins or until the vegetables are tender.
  5. Remove from pan from heat n cool for few mins. Puree the soup until smooth in a food processor  or hand blender.
  6. Return to clean pan n reheat gently.
  7. Serve immediately with fresh coriander.
