Cumin- Spiced Carrot Soup
Ingredients:
- 1tbsp Olive oil
- 1 Large Onion Finely chopped
- 1 Clove Garlic finely chopped
- 1tbsp Ground Cumin
- 6 medium carrots, thinly sliced
- 900ml Vegetable Stock
- 1tsp ground black pepper
- 1tsp Fresh Coriander to garnish
Method:
- Heat oil in a large saucepan, add onions, garlic and fry gently for 5mins or until softened, stirring occasionally.
- Now add cumin and fry, stirring for 1 to 2 mins to release flavor.
- Now add Carrots, stock n black pepper to the onion mixture n stir to combine.
- Bring to simmer, cover n stir occasionally, for 30-35 mins or until the vegetables are tender.
- Remove from pan from heat n cool for few mins. Puree the soup until smooth in a food processor or hand blender.
- Return to clean pan n reheat gently.
- Serve immediately with fresh coriander.
