Chinese Lemon Coriander Soup


Ingredients:

  • 2.3/4tsp Lemon Juice
  • 1/2tsp Lemon Zest (1st grated layer of lemon skin)
  • 3tbsp Finely chopped coriander
  • 2-3 Baby corn cobs finely chopped n blanched
  • 1 Medium Carrot finely chopped n blanched
  • 1/4 small broccoli finely chopped n blanched
  • 1tbsp Olive oil
  • 2 cloves of garlic finely chopped
  • 2-3 button Mushrooms finely chopped
  • 1/4 small Chinese cabbage finely chopped
  • 4 cup vegetable stock
  • Salt to taste
  • 4-5 black pepper corns finely crushed
  • 3tbsp Cornflour 

  Method:

  1. Mix cornflour in 1/2cup of vegetable stock n set aside.
  2. Heat oil in a wok, add garlic n sauté for few minutes. To that add Chinese cabbage n mushrooms n mix n sauté for 2-3mins.
  3. Stir in remaining vegetable stock n bring to boil. Now add baby corn, carrots n broccoli n mix well n cook on high heat for 1min.
  4. Now add salt n black pepper n mix well, stir in cornflour mixture n coriander n switch off the heat.
  5. Add Lemon juice n zest, mix well n Serve Hot.
