Spinach Idli



Spinach Idli


Ingredients:

  • 1/2 cup split yellow gram (yellow moong dal) Soaked in water for 4hours
  • 3/4 cup Spinach blanched n chopped
  • 3 Green Chillies chopped
  • 1tbsp Fresh Low Fat Yogurt
  • Salt to taste
  • 1/2tsp Fruit Salt
  • 1/4tsp Olive Oil for Greasing
  • 1/4 Cup Carrot Grated
  • 2tsp Warm Water

Method:

  1. Take a blender n add split yellow gram, spinach n green Chillies n blend in a soomth paste without adding any water.
  2. Now add the mixture into a large bowl n add yogurt, grated carrot n salt n mix well.
  3. Just before steaming add fruit salt to the batter using 2tsp of warm water.
  4. Now Grease the idli moulds using little oil, pour in the batter n steam in a steamer for 15mins or until idlis are cooked.
  5. Cool slightly n demould the idlis n serve immediately with your choice of chutney.

Indian Spiced Cauliflower Soup



Indian Spiced Cauliflower Soup


Ingredients:

  • 40gm Olive butter
  • 1 Onion Finely chopped
  • 2 garlic crushed
  • 1tsp ginger grated
  • 1long green chilli finely chopped
  • 2tsp ground cumin
  • 1tsp ground coriander
  • 1tsp Garam Masala
  • 1/2tsp Turmeric
  • 1large Cauliflower cut into florets
  • 1 Large potato chopped
  • 4cups vegetable stock
  • 400ml coconut milk
  • Coriander leave to garnish
  • Salt to taste 

Method:

  1. Heat half butter in a large saucepan over medium heat. Add onions for 5mins until soften.
  2. Add garlic, ginger, chilli, cumin, coriander, garam masala n turmeric n mix for 2mins until fragrant. Now add cauliflower n potato to the mixture.
  3. Add the stock n bring to boil. Reduce heat to low n cook stirring occasionally for 20mins until cauliflower is tender.
  4. Now add coconut milk n stir to combine. Set aside for 10mins to cool.
  5. Now place the soup mixture to the blender n blend until smooth adding salt.
  6. Return to the saucepan over low heat n cook for 5mins.
  7. Garnish with fresh coriander n serve hot.

Healthy Chocolate Cake

Ingredients:

  • 2 Large Eggs
  • 1.3/4th Cup Wheat Flour
  • 3/4 cup coco powder
  • 2cups Powdered Brown Sugar
  • 1/2 Cup Olive oil
  • 1 cup Milk
  • 1cup Hot water
  • 2tsp Baking powder
  • 1tsp Baking Soda
  • 1 pinch salt
  • 1tsp powdered icing sugar for dusting.

Method:

  1. In a large bowl add wheat flour, coco powder, baking powder, baking soda n salt n mix well n keep aside.
  2. Beat eggs nicely adding powered brown sugar n keep beating now add oil n beat again ( adding little at a time).
  3. Now add Half of the dry mix n fold in (don’t mix) adding milk n mix gently.
  4. Now add hot water n mix for 3mins at medium speed in one direction only.
  5. Pour into greased baking pan n bake for 40-45mins at 150 Degree’s. Check if not done yet then leave 10 more mins. (When u put the knife it should come out clean at the midpoint).
  6. Let it cool down n cut into required shapes n dust icing sugar n serve.

Healthy Green Smoothie


Healthy Green Smoothie


Ingredients

  • 1 Medium lime
  • 1 Medium Apple
  • 1 Cucumber
  • 1/2 Medium Avocado
  • 320ml Coconut water
  • 30gms Baby Spinach
  • 1tsp freshly grated ginger
  • 50gms Baby Kale ( optional)

Method:

  1. Blend or process all ingredients until smooth.
  2. Divide between two glasses n serve immediately.

Info: This smoothie has Carbohydrates, proteins, fiber.
