Ivy Gourd/ Tindora Fry

Ingredients:

  • 1cup Ivy Gourd (cut in lengthwise)
  • 1tsp Red Chili Powder 
  • 2tsp Coriander powder 
  • 1tsp Cumin Powder 
  • Olive oil as required 
  • 1tsp Cumin seeds 
  • 1tsp Mustard Seeds 
  • 1tsp Garlic finely chopped 
  • Pinch of asafoetida 
  • 5-6 Curry leaves chopped 
  • 2 Green Chilies finely chopped 
  • 1.1/2tsp Garam Masala Powder 
  • 2tsp Fresh Coconut Grated 
  • 1/4tsp Turmeric powder 
  • 1tsp Lemon juice 
  • 1/4 cup Coriander Finely chopped 
  • Salt to taste

Method:

1. Take a large bowl add Ivy Cut lengthwise n in goes with it red chili powder, cumin powder, coriander powder, lemon juice mix well n keep aside for 15mins.

2. Heat oil in a pan, when hot add Mustard seeds, cumin seeds, asafoetida, garlic, green chili n curry leaves n saute for 2mins.

3. Now add Ivy mix to the pan adding salt, garam masala n grated coconut n cook until Ivy gets cooked.

4. Sprinkle chopped coriander n serve hot.
