Tomato Chilli Salsa

Ingredients:

  • 1 Small Red Onion finely chopped
  •  2tsp Vegetable oil
  •  1 Red Chilli, seeded finely chopped
  •  1 Clove Garlic, crushed
  •  1 Small Green Capsicum finely chopped
  •  400g Can Tomato
  •  1tbsp Coriander Leaves finely chopped
  •  Salt to taste

Method:


1. Heat the oil in a medium pan, add the onions, chilli, garlic and capsicum n cook, stirring until the onion is soft.
2. Add the un-drained tomatoes n bring to the boil, simmer, uncovered, stirring occasionally for 5mins or until the mixture thickens slightly adding salt.
3. Transfer the mixture to a bowl n refrigerate until cooled.
4. Stir in the coriander before serving.
Serve with Corn Chips.
