Tomato
Chilli Salsa
Ingredients:
- 1 Small Red Onion finely chopped
- 2tsp Vegetable oil
- 1 Red Chilli, seeded finely chopped
- 1 Clove Garlic, crushed
- 1 Small Green Capsicum finely chopped
- 400g Can Tomato
- 1tbsp Coriander Leaves finely chopped
- Salt to taste
Method:
1. Heat the oil in a medium pan, add the onions, chilli, garlic and capsicum n
cook, stirring until the onion is soft.
2. Add
the un-drained tomatoes n bring to the boil, simmer, uncovered, stirring occasionally
for 5mins or until the mixture thickens slightly adding salt.
3.
Transfer the mixture to a bowl n refrigerate until cooled.
4. Stir
in the coriander before serving.
Serve
with Corn Chips.
